Chicken & Black Bean Salad

1 pound boneless skinless Chicken Breast 

1/2 teaspoon salt

1 teaspoon pepper

1 tablespoon olive oil or vegetable oil

6 cups of chopped lettuce 

2 cups of chopped spinach 

1 can black beans, drained, rinsed

1 cup of pico with celantro 

1/2 cup of sweet corn

1/2 cup of your choice of dressing

Season Chicken with salt and pepper. Dice and cook in a  non-stick pan with oil until done. 

Place lettuce and spinach on plate layer ingredients and chicken on top. 

Add a dollop of guacamole.
